Yahala Restaurant: Setting Benchmark for Authentic Middle Eastern Cuisine

In an exclusive interview with Top 10 of Asia, Yahala Restaurant’s Operations Manager, Mostapha Ait Baba, offers a compelling look into the brand’s evolution, operational philosophy and ambitions for the future. Yahala has made a name for itself as one of Malaysia’s top Middle Eastern dining destinations by putting an extreme value on authenticity, consistency and hospitality.

Mostapha begins by outlining his role within the organisation. “As the Operations Manager, it falls under my responsibility to supervise daily operations, service standards and team performance in order to guarantee constant quality throughout all locations,” he shares. Since its establishment, Yahala has remained steadfast in its mission to deliver authentic Middle Eastern cuisine complemented by warm Arabic hospitality — a formula that has earned the brand numerous accolades over the years.

The core of Yahala’s appeal is its unwavering commitment to authenticity. According to Mostapha, “Authentic recipes made by skilled Middle Eastern chefs, premium ingredients, stringent quality control standards, and warm, professional hospitality are our key strengths.” He continues by saying that the restaurant’s ability to maintain traditional flavours while altering them to suit local preferences has been crucial in building customer trust.

Yahala’s Signature Lamb Sidr is one distinctive feature that has come to represent the Yahala experience. “We are proud to say that Yahala was the first to introduce the style of cooking the lamb in a taboon oven and presenting it by knocking the Tanjia to release the fragrant rice directly onto the serving plate,” he says. Since then, several Middle Eastern restaurants in Malaysia have followed this spectacular yet deeply rooted culinary presentation, proving Yahala’s effect on the development of the local dining landscape.

Reflecting on the brand’s steady growth, Mostapha attributes success to a combination of strong operational discipline and people-centric values. “One of the most important foundations is our strong operational system supported by clear standard operating procedures, which helps ensure consistency across all outlets,” he says. The focus on ongoing personnel development and training is equally important. “We believe that a well-trained and motivated team is essential in delivering excellent service and maintaining high standards.”

This commitment to consistency is not limited to the kitchen. “Every dish served and every interaction with our guests reflects the values we uphold as a brand,” he adds, highlighting Yahala’s customer-centric culture and strategic management planning as major factors of its steady expansion and loyal customer base.

Managing the restaurant, Mostapha describes his leadership style as “hands-on, supportive and performance-driven.” He elaborates, “I believe in being present on the ground, listening to my team and providing clear direction.”

His motivation stems from both internal and external sources. “My inspiration comes from witnessing the growth of our team and the positive impact Yahala continues to create among our customers.” From staff development to customer feedback and industry recognition, each milestone bolsters his commitment to elevating standards. “Since Yahala has consistently received industry recognition since 2019, it also comes with a sense of responsibility to maintain the reputation we have built,” he reflects.

Envisioning the future, Mostapha is both ambitious and grounded. “In the next five years, I envision Yahala growing into one of the leading Middle Eastern restaurant chains not only in Malaysia but also within the region,” he says. Aside expansion, the brand aspires to set benchmarks in operational excellence while becoming a preferred place within the F&B industry through strong talent development initiatives.

Ultimately, Yahala’s journey is one defined by authenticity, innovation and a deep respect for its creation. The objective is “to ensure the brand continues to innovate, expand strategically and remain close to the hearts of Malaysians for many years to come,” as Mostapha concisely puts it.
